Özet

The chitinase

which is identified in the literature is also known with is chemical name

β-1,4-N- acetyl glucosamine. Chitinases are produced by plants, animals and

microorganisms. Microbial-derived chitinases are preferred for biotechnological

applications. Chitinases are preferred in food industry, feed additives, paper

industry and soil improvement. In biotechnology, chitinase enzyme studies are

an effective tool to be used in the production of enzymes, or in the

development of their properties.

The aim of this

study was to investigate the molecular identification of Bacillus pumilus strain isolated from fatty cheese by 16S rRNA, to

determine its chitinase enzyme activity and to evaluate its possible industrial

effectiveness. The identification was performed using the 16S rRNA method. The

identification rate of Bacillus pumilus was

99 % and the optimum temperature of the extracellular chitinase enzyme was

determined as 40°C and the optimum pH was pH 7.0. According to the results, it

has been confirmed with our study that the bacterium can be introduced to the

industrial use due to the characteristics of the enzyme produced by this

bacterium and that it can be used as a starter culture in the food industry.
