Buğday, tarihin ilk çağlarından

beri insan beslenmesinde önemli bir yere sahip olmuştur. Buğday tanesi,

yaklaşık % 8 kabuk, % 7 aleuron, % 3 ruşeym ve % 82 unsu endospermden

oluşmaktadır. Tanenin endosperm kısmı nişasta, kabuk (kepek) kısmı diyet lifi

ve mineral madde, ruşeym kısmı ise protein, yağ, vitamin ve fitokimyasal bileşenler

bakımından oldukça zengindir. Teknolojik kalite bakımından, un

değirmenciliğinde tanenin unsu endosperm kısmını içeren rafine beyaz un üretimi

oldukça yaygın olmasına rağmen, son yıllarda besinsel kalitenin esas alındığı

sağlıklı ürünlere olan talebin artması tanenin bütün kısımlarını içeren tam

buğday unu üretimini artırmıştır. Tam buğday ununun, daha üstün besinsel

özelliklere sahip olmasının yanı sıra, özellikle kabuk ve rüşeymden dolayı

böceklenme ve ransit (acı) tat oluşumu nedeni ile depolama stabilitesi oldukça

düşüktür. Depolama stabilitesini düşüren ransit tat oluşumunda temel etken,

yağın yanı sıra lipaz, proteaz, lipoksidaz, lipoksigenaz, katalaz gibi pek çok

oksidatif ve hidrolitik enzimler bakımından zengin olan ruşeym kısmında

öğütmeden sonra meydana gelen oksidatif ve hidrolitik reaksiyonlardır.

Bu proje kapsamında, öğütmeden önce taneye yıkama

işleminin uygulanması, unun nem içeriği ve antioksidan özellik gösteren

etkisi araştırılacaktır. Çalışmada, tam buğday unu

depolamada, buğdaya yıkama işlemi uygulaması (yıkama yapılmış ve yıkama

yapılmamış), iki farklı un nem içeriği (%8 ve %14,5) ve iki farklı doğal

bitkisel katkı ilavesi faktör olarak seçilecektir. Nar kabuğu, kuşburnu çekirdeği, adaçayı ve yeşil

çaydan oluşan bitkisel katkılardan en iyi antioksidan kapasiteye sahip olan

ikisi yapılacak ön denemeler ile belirlenecektir.
